Ingredients

  • 18 oz white chocolate chips about 3 cups
  • 1 can (14 oz) sweetened condensed milk
  • 0.125 tsp kosher salt
  • 0.5 tsp peppermint extract
  • 0.5 cup candy canes crushed

Equipment

  • 1 8x8-inch baking pan

Method

  1. Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. Combine the white chocolate chips, sweetened condensed milk, and salt in a medium saucepan over low heat.
  3. Stir constantly for 5–8 minutes until smooth, then remove from the heat.
  4. Stir in the peppermint extract and crushed candy canes.
  5. Spread the mixture evenly in the prepared pan.
  6. Refrigerate for 2–3 hours, until firm.
  7. Lift the fudge from the pan and cut it into 16 pieces.

Notes

For clean cuts, use the parchment overhang to lift the fudge and cut it with a sharp knife. Store covered in the refrigerator for up to 1 week; freeze for up to 2 months. For a dairy-free variation, use dairy-free white chocolate chips and sweetened condensed coconut milk.
