Caramel Apple Grapes

Caramel apple grapes turn fresh green grapes into bite-size treats dipped in a smooth caramel coating and rolled in roasted peanuts. A brief chill sets the coating for a crisp, crunchy finish.

Ingredients

For the grapes
  • 1 lb green grapes seedless; about 24 large grapes
For the caramel coating
  • 1 package (11 oz) caramel bits
  • 2 tbsp heavy cream
For the topping
  • 0.5 cup peanuts finely chopped, roasted

Equipment

  • 1 9x13-inch baking sheet
  • 1 microwave

Method

Prepare the grapes
  1. Line a 9x13-inch baking sheet with parchment paper.
  2. Rinse the grapes and remove any stems.
  3. Dry the grapes very thoroughly.
  4. Insert a toothpick into the stem end of each grape.
Melt the caramel
  1. Combine the caramel bits and heavy cream in a microwave-safe bowl.
  2. Microwave at 50% power in 30-second bursts, stirring after each, for 1 to 2 minutes total, until smooth.
Coat and chill
  1. Pour the peanuts into a small bowl.
  2. Dip each grape in the caramel, let the excess drip off, and roll it in the peanuts before setting it on the prepared baking sheet.
  3. Refrigerate the grapes for 20 minutes, until the caramel is set, then serve.

Notes

Dry the grapes very thoroughly so the caramel coating adheres well. Refrigerate in an airtight container for up to 2 days; freezing is not recommended. For a nut-free variation, use roasted pumpkin seeds instead of peanuts.
