Ingredients

  • 1 lb ground pork breakfast sausage
  • 1 tbsp vegetable oil
  • 1 yellow onion small, diced
  • 1 green bell pepper medium, diced
  • 1 bag (20 oz) frozen diced potatoes
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 6 eggs large
  • 1 cup sharp cheddar cheese shredded

Equipment

  • 1 12-inch skillet

Method

  1. Heat a 12-inch skillet over medium-high heat and cook the sausage, breaking it into small crumbles, for 8 to 10 minutes, until browned and cooked to 160°F.
  2. Transfer the sausage to a plate and carefully drain the skillet.
  3. Add the oil, onion, and bell pepper to the skillet and cook over medium heat for 4 to 5 minutes, stirring occasionally, until softened.
  4. Stir in the frozen potatoes, salt, and pepper, cover, and cook over medium heat for 10 minutes.
  5. Uncover and cook for 8 to 12 minutes, stirring occasionally, until the potatoes are tender and browned.
  6. Return the sausage to the skillet and stir to combine.
  7. Beat the eggs in a bowl and pour them into the skillet.
  8. Cook over medium-low heat, stirring gently, until fully set and 160°F, about 3 to 5 minutes.
  9. Sprinkle the cheese over the skillet, cover, and cook for 1 to 2 minutes, until the cheese melts.

Notes

For tender eggs, stir gently and remove the skillet from the heat as soon as they are fully set and reach 160°F. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended for the best potato and egg texture. For a lower-fat option, use turkey breakfast sausage.
