Ingredients

For the soup
  • 1 lb ground beef 85% lean
  • 1 yellow onion medium, diced
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 tsp Italian seasoning
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14.5 oz) diced tomatoes
  • 7 cups low-sodium beef broth
  • 8 oz lasagna noodles broken into 2- to 3-inch pieces
For the cheese topping
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated

Equipment

  • 1 6-quart slow cooker

Method

Brown the beef
  1. In a large skillet over medium-high heat, cook the ground beef and onion, breaking up the beef, until the beef is browned and the onion is softened, 7 to 9 minutes. Drain excess grease and stir in the salt and pepper.
Slow-cook the soup
  1. Stir the garlic, tomato paste, and Italian seasoning into the skillet and cook for 1 minute, then transfer the mixture to a 6-quart slow cooker.
  2. Add the crushed tomatoes, diced tomatoes, and beef broth, then cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
Cook the noodles
  1. Stir in the broken lasagna noodles, cover, and cook on HIGH for 30 to 45 minutes, until the noodles are tender.
Make the cheese topping
  1. Stir together the ricotta, mozzarella, and Parmesan in a small bowl.
Serve
  1. Ladle the soup into bowls and top each serving with some of the cheese mixture.

Notes

For the best noodle texture, serve soon after adding the noodles, since they continue to absorb broth as the soup sits. Refrigerate leftovers for 3 to 4 days or freeze for up to 3 months; the noodles may soften after thawing. For a gluten-free option, use gluten-free lasagna noodles.
