Roasted Mushrooms with Garlic and Thyme

Roasted mushrooms with garlic and thyme are oven-roasted until browned and tender, with fresh thyme and garlic for savory flavor. A single layer on a large rimmed baking sheet helps the cremini mushrooms roast evenly.

Ingredients

  • 1.5 lb cremini mushrooms halved or quartered if large
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 tbsp thyme fresh leaves
  • 3 cloves garlic finely chopped

Equipment

  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Toss the mushrooms with the olive oil, kosher salt, black pepper, and thyme on a large rimmed baking sheet.
  3. Spread the mushrooms in a single layer.
  4. Roast for 15 minutes.
  5. Toss the mushrooms with the garlic.
  6. Spread the mushrooms out again.
  7. Roast for 8 to 12 minutes more, until the mushrooms are browned and tender.

Notes

Spread the mushrooms in a single layer so they brown rather than steam. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the mushrooms can become soft. The recipe is dairy-free as written; keep the olive oil instead of swapping in butter.
